Welcome to the first of Mise en Place’s Cooking 101 series. Each month we will highlight a different method, technique or food. The classes are great building blocks for any home cook, at any level. There’s nothing better than a great roasted chicken! This class will review poultry, how to clean, season, truss and even spatchcock a bird. Accompanying the chicken will be a couple of simple side dishes.
